Maundy is short for the Latin, "Mandatum," meaning "Command". A new and greater reality comes in our Lord and Savior Jesus Christ who makes the Old Testament remembrance meal of Passover into the New Testament meal where he is the Lamb of God who takes away our sins in his body and blood.
